Paleo Cinnamon Muffins!


Our buddy, Theresa Merkel (the lady behind LunchBox RX), created this super yummy recipe! This is perfect for snacks or a breakfast bite on the go. There’s so low calorie you can eat several! Plus, they’re very quick and easy to make. Pro tip: Let these babies cool and they’ll actually taste sweeter. If its still not sweet enough pair with a little honey.


Paleo Muffins


1 cup organic sweet potato puree (I use Farmer’s Market brand)

1/2 cup organic egg whites

3 farm fresh eggs (Naturefed is an awesome brand if you don’t have farm fresh eggs)

4 oz organic applesauce

4 tbs organic coconut flour

3 tsp cinnamon

1 tsp bourbon vanilla extract (Trader Joe’s)

1 tsp organic baking powder

2 scoops SFH Pure Vanilla Protein

10 drops organic liquid stevia

Add all ingredients to your favorite mixing bowl in any order you like, sift the coconut flour in to avoid clumps and lumps. Mix it good. Real good! Evenly pour into 12 muffins – I use a silicon muffin pan OR muffin liners from If You Care and bake at 350 for 15-20 minutes. Toothpick check when you feel they are ready.

Now for the cinnamon topping…in a bowl mix 1tbs organic coconut flour and 2tbs organic coconut sugar, then add in 2tbs KerryGold Butter. I cut the butter into tiny squares and mushed it all up until it was a dough consistency. I then added a few pieces of the “dough” to the top of each muffin and let it sit in the warm oven for just a few minutes. YUM!

If you omit the topping on these muffins, the macros are:

78 Calories

2g Fiber
